Sucrose: Sucrose is the sugary component of honey, with a maximum allowable level of 5%, except for certain types such as honeydew honey, which can range between 10% to 15%. The sucrose level is used to determine if bees have been fed with flower nectar.
Acidity: The acidity level should be 20.5 meq/kg. The upper limit for acidity in Sidr honey is 50 meq/kg. Sidr honey, which has medium acidity and very low sucrose content, is beneficial and not harmful to diabetics.
Hydroxymethylfurfural (HMF): HMF indicates the extent to which honey has been exposed to heat or stored improperly. The HMF percentage in honey should not exceed 80 mg/kg.
pH Acidity: pH acidity is measured to assess the acidity level in honey, and it should not exceed 50 mg/kg, except for certain types like thorn honey.
Diastase Enzyme Activity: All types of honey should have a minimum diastase enzyme activity of 3 units. Original Sidr honey typically has high diastase enzyme activity, which is a distinguishing feature that makes it suitable for medicinal purposes.
Insoluble Solids: The maximum level of insoluble solids in Doani honey is 0.1%. This indicates that Doani honey is pure and free from impurities like wax and other insoluble substances. In compressed honey, the maximum level is 0.5%.
Ash and Mineral Elements: In Doani honey, the percentage of ash should be a maximum of 1%. This confirms the authenticity and purity of Doani honey, making it truly royal.
